Chicken Luwombo

Pictured below is some of the most delicious chicken I have ever eaten: Chicken Luwombo. It takes forever to make, so people make it for special occasions. The chicken is cooked over a charcoal fire, inside a shaped pocket of banana leaves. It is incredibly savory. The flavor is partially attributed to the banana leaves and a special kind of wild mushroom that is added to the sauce the chicken simmers in.
